I'm making my first batch of home brew. I'm making 3 gallons of hard apple cider but decided to substitute half a gallon with black cherry juice. Do I need to add any tanons? It's almost ready to be racked, so is actually a little late to be asking this question? Thanks.
 
Just realized there's a separate cider forum, but it's basically a wine recipe so the question still stands.
 
Oh, people do go back and forth about whats a cider and what's a wine.

Since your tannins will be from extract and not grape skins, I say wait til it's almost ready to bottle and draw off two glasses. Add tannin to one and see which you like better.

You only *need* to do something if you're working from a recipe and you want the exact same product as advertised.
