It doesn't taste too dry, at least not as dry as the wines I typically make. Very enjoyable, refreshing, I enjoy the carbonation level it is at. No apple taste apparent at this point.

The apple taste kind of creeps back in later. It's more of a smell really. Oh, and, when was the last time that you calibrated your hydrometer?

Good point, hydrometer is like 6 months old, haven't calibrated it. In fact, I need to learn to do that.

You can put it in distilled water that is the temperature that it is calibrated to, usually 60 degrees I think. That will give you 0. But then most people feel that to know it's accurate you need to check it midrange too. There's some solution you can use.. It's something like 25 grams of table sugar to 100ml of water will give you 1.070 or something like that. I haven't done it. I have a cheap hydrometer that reads 1.006 in water.
