Default Apelwein... miscalculated 240oz short

I guess my math is terrible today. I bought 5 96oz jugs of applejuice... so I need 2.5 more.

Can I just leave it as-is until tomorrow with sugar and applejuice, or can I pitch yeast and add more tomorrow?

What do you suggest?

You can leave it. Just cover it and add additional juice tomorrow and then pitch the yeast... it will be fine

You could have pitched and let the yeast get started. Doesn't really matter.

Mine's been fermenting for 2 days now. It's in a 7.5 gallon bucket. Can I crack open the lid and add 2 more gallons of juice after it's already started fermenting?

If you need juice to balance everything out, shouldn't be a problem.
