I have just bottled a batch of Cherry/Lemon wine roughly based on the Skeeter Pee recipe. The wine cleared great however, with a ABV of 10% it has an alcohol taste and smell. I'm expecting this will have to age 3 months to be able to drink. Did i do something wrong or is there a way to fix this other than time?
backsweeten it with some cherry juice, thats about all you can do. age will probably help it too, id keep it in a carboy and wait about 6 months, try it and if it is still rocket fuel then id go ahead and stabalize and backsweeten.
