I'm making some of Jack Keller's recipes and they call for ascorbic acid. I have a bag called acid blend, "contains citric, malic, and tararic acid. Same or different?

Recipes 

Different. All of those are different chemical formulas. They are all acids because they all have the ability to donate a hydrogen ion. Acids share some other charateristics like a sour taste and a pH below 7.0.

Specifically, ascorbic acid is vitamin C. The blend blends 3 types of acids.

It may be interchangeable in your recipe, but that's something I'll let others comment on.

I'm following a Keller recipe now that calls for "Acid Blend" and my LHBS gave me the same thing you have, citric, malic, and tartaric, in even proportions according to LHBS.

We only use Tartaric and Citric and citric is rare, but the fruit has all three of those in it inherently.
