Acid blend is a blend of tartaric, citric, and malic acids.

A squeeze of lemon juice would give you some citric acid, but not the others. It really doesn't have a good substitute.

What is the flavor lacking? If you're lacking a balanced acid bite you can't really sub that with fruit, but if you're missing just a tiny bit of tartness, lemon juice could help.

Thanks for the replies. I am making a pear wine from the Jack Keller site. It calls for 1 1/2 tsp acid blend per gallon at the start. I have twenty five lbs of pears, one pound of golden grapes and eight pounds of sugar in 5 gallons of water. The sg is 1080 and I just pitched a sack of 1118. I had the pectin enzyme, nutrient, c tabs and tannin on hand but no acid blend. Mike
