Sooo.... What temp are you guys fermenting at? Since notty is pretty clean I'm not expecting any nice esters so may aim low for a really clean beer and to possibly retain just a touch of diacetyl. If I can get it to stay at that specific amount where it seems to add to the body and give a hint of butterscotch I think it could work really well in this beer. Does notty throw diacetyl at all? It's been a looong time since I've used it. I'm thinking I'll set the fermenter to 62 and bottle at 10 days, taste and gravity depending.

And for full disclosure, I'm using:

Thomas Fawcett Maris Otter
Simpson's Medium Crystal
Crisp Chocolate Malt

2010 whole leaf Fuggles 4.5%AA from Fresh Hops

A packet of Nottingham lot 1089001V

Durham, NC water, filtered, adjusted to 57 ppm Ca, 2 ppm Mg, 25 ppm Na, 103 ppm Cl, 41 ppm SO4 with CaCl2 for an expected mash pH of 5.21.
