I think my boss told me about the Fry's (Kroger branded) remodel in town and how they had some one making Sushi. this was a few months back and I never though Sushi from a grocery store to be very trust worthy, but I guess I'll now have to go check it out given all the hype this thread has.

Don't need to try it. Quality sushi bars have their own supply chain. A supermarket sources their fish elsewhere. The quality is not comparable.

The tuna that the local Shoprite uses in their sushi bar is the EXACT product used at all the higher end places here. It's the single steak vac sealed and flash frozen at the packer. Frankly, I trust it more than any other fish unless I see it physically coming off the boat with my own eyes.
When I say higher end, I mean your typical sushi restaurant that doesn't sell anything else. I'm sure there are other places that truck whole fresh tuna in, but I can't afford that type of spot so I know nothing about it.

Just so the West Coast can partake, Krogers is called Fred Meyer's around here.
I have definitely had the sushi, and found it to be OK, another grocery store sushi made me sick though, so I have not found the courage to do grocery store sushi again.
