Default Homemade mash paddle

Made a mash paddle yesterday with the girlfriends grandpa. Used part of an old oak pallet. Planed it down and cut it up. After reading the other thread on here about what type if wood to use it dawned on me that their is no telling what the wood soaked up over its use as a pallet. So I'm going to build a new one out of ash. Has anyone used ash? I assume any hardwood will do?

Ash will be fine.
Pretty much anything that isn't going to give off a lot of flavors is good.
Some will last better, a good hard wood like Ash will be great.
