Default Tukey sausage

We have been eating Wellshire Farms Turkey Andouille sausage a lot lately (http://www.wellshirefarms.com/store/page10.html) and am wanting to make some at home as I just got a KA meat grinder attachment. Does anyone know what kind of turkey to use, and since turkey is so lean, what kind and how much fat to use to still make it taste good. Thanks!

i'm basing this on the chicken sausage recipes i've seen, but i would use turkey breast and add in somewhere around 30% fat. and probably just use pork fat back, that will give great flavor.
