@ lex990...I have already modified the charcoal pan by drilling a bunch of holes in it. That really helped the ash fall out, and permitted air to flow to the charcoal.

We finished lunch a few minutes ago...and the pulled pork was EXCELLENT! Daughter #2's fiance had never had pulled pork topped with a spoonful of cole slaw...he ate TWO kaiser rolls of the stuff and pronounced it outstanding! And we have enough left over for at least another two meals! Yummy good stuff! And the Phat Tyre Amber homebrew I had went extremely well with the pulled pork.

Now, I must be off to the airport in Milwaukee so daughter #4 can fly back to New Orleans. <sniff> I'll miss her!

Cooking some 4.5 pound chickens right now. I find this cooks very easy.

Those are what I smoked on for the first 10 years of my smoking career. Then I discovered Internet BBQ forums and my obsession took off. I have about 10 smokers now. 3 of which are uds's. Which is one you will make for yourself I'm sure once you get your feet wet. I can get 16 hrs out of mine on a single fuel load. Did a 25lb whole pork shoulder over night a few months back.

The ecb is a fun entry level toy that can produce great food Welcome to the obsessed man. It gets in your blood as much or more than brewing

Glenn, my only son, only kid, is in the Air Force. I know what you mean.

But, the smoker, and some friends, are worth it. Smoke a lot, drink plenty of Homebrew, and enjoy yourself. Both hobbies are a recipe for good times.
