Default My first pancetta

When I moved to a small farm I bought a couple pigs. Then I bought a couple more. Not sure I'll be doing that again.

Cured for a week and a half, rolled and hung this morning. Will probably end up re-tieing the one in front.

That is just ... AWESOME! I've been thinking about doing that. I even bought a book! How long are you gonna hang it for?

Til it's dry, I guess. Hopefully 2-3 weeks. I know I should've left them flat because then I'd be guaranteed it would dry without problem, but I just had to roll them. Did my best to get a very tight roll, the idiot who butchered them (me) didn't trim the belly very well. Fingers crossed. Need to rig something up with welded wire to keep the critters out, too.
