Default Canning Smoked Jalapenos

Its kinda early but does anyone have a recipe? I would like to smoke the little buggers first before canning them. Kinda like fire roasted or something like that.

Do you have a smoker? If so just smoke them over your favorite wood and your good.

My personal favorite for peppers is mesquite chips.

I would smoke them and then dry them instead of canning.

A smoke jalapeno is a chipotle by the way.

I think I'm going for a light smoke something to add to the Canning, not so much drying on the the drying part. I am going to have 5 plaints growing so I might make a batch of canned and leave some on the vine for chipotle peppers at the end of the season. Thanks for the Ideas.

We make lots of smoked, pickled jalapenos at my restaurant. Its easy and they are amazing! Just smoke your jalapenos for a couple hours then toss them into sterilized mason jars with a 50:50 water to vinegar brine and some pickling spices.
