Sensor locations??

I've gathered most of the parts for a single tier all electric rig.
I'm good with the electrical details, except, I'm not sure where to locate my immersion sensors.
I'm planning to have a HLT with a HEX, Rubbermaid Mash Tun, and a Keggle.
I have two March 809's; one for hot water, and one for wort.
I'll operate the Keggle with one PID.
I'm going to use the HLT PID controller to operate the element based on either of two sensors, one in the HLT for water temp, the other in the HEX flow for HERMS temp control via the HLT element.
So.. Where to locate the sensors? Input on fluid flow would be great also.
