Default BIAB eKeggle Sanity Check

Been browsing for awhile. I currently have 2 projects going on, a pony keg still, and a 1/2 barrel BIAB eKeggle for beer. Here is my plan so far for the eKeggle:

1. 12" opening cut into top for generic pot lid.
2. 1" stainless half coupler welded in bottom portion of keg for 4000/5500W heating element.
3. 1/2" stainless half coupler welded for pickup tube / drain valve (bargainfitting.com conversion).
4. 1/2" stainless half coupler for 2.5" probe thermometer.
5. false bottom (will measure once I have the lid cut).

My question comes in with the heating controller. I would like to have 1 controller I can use for both my still and the brew pot (as I won't be running both at the same time). I have been looking at this basic controller from stilldragon:

this is a manual controller for fine tuning the control of the heating element, though I have also been looking at the 4500 Single Element no pump PID diagram here:

I don't think the PID would really be necessary for the still but I'm not sure how to modify it to include a manual override.

I'm thinking the stilldragon controller would work with the brew pot but would just require more baby sitting / adjusting to prevent boil overs.

Any advice or thoughts from those more experience than me?
