Default Some Kombucha Links

I am just getting started making kombucha. Here are some of the links I have found helpful.

Does storebought still work? I recall there was a bit of hubbub earlier in the year about possible increases in alcohol content in Kombucha and that a number of brands were reformulating to case any further fermentation. I'm not sure by what means they're doing that though. If they pasturize, for example, I don't think the growth would work. You should be able to hang out at a health food store and ask around though. Theres usually someone who has it. (That's where I talk about Kombucha and kefir with people oddly enough)

I am not sure if it still works but I may still see if I can crete a mother from it just to compare the flavor and other characteristics of the one I purchased.

I'll say that the bottle I have in the fridge is still powerful. I let the pressure off each day and the carbonation is if anything stronger each day.

Well, if you're doing that, then that sounds like it's active. I think I'll get around to asking one of my friends for one of their spares, but I'd go for online or from the bottle if I didn't know them, or live in the type of community where there's a few of them.

None of the brands that I've seen have taken up pasteurization; Kombucha Wonder Drink was always pasteurised (as, I believe, was another one that I can't recall), but most of the brands in my local Whole Foods still contain active cultures. Any reformulation that occurred was to change the yeast used (e.g. to an aerobic non-Saccharomyces strain) or to reduce the residual sugar content; I believe that some may have also reduced the advised shelf life to limit the time in which a secondary fermentation could occur.

Ah thanks, I haven't bought any for a while, since I was getting some from friends and was looking at making my own, but started on Keifer before that had even happened.
