Default Newbie brewer w/ questions

I have done a few "gluten-ful" batches and am gearing up to do a GF one for my Celiac wife. My question is about gelatinizing grains for a partial mash. Can I use regular (Bob's Red Mill, etc) quinoa and GF oats and such for brewing? And if so any tips on how long I need to boil them for adequate gelatinization? Thanks, and so far this forum has inspired and helped already.
