Default How does this recipe look?

My mom has celiac, and I want to make her a GF ale for Mother's Day. Here is my initial stab at a recipe, after reading several posts. Please let me know if there is anything in it that wouldn't work. Thanks!

Recipe Type: All Grain
Yeast: US-05
Yeast Starter: No
Batch Size (Gallons): 2.5
Original Gravity: 1.050
Final Gravity: 1.010
IBU: 47.5
Brewhouse Efficiency: 61%
Boiling Time (Minutes): 60
Color: ? (not sure about molasses' contribution)
Primary Fermentation (# of Days & Temp): 7 Days at 68 F
Secondary Fermentation (# of Days & Temp): 14 Days at 68 F

Grain Bill
5.27 lbs (90%) Millet
0.31 lbs (5%) GF Oats

0.17 lbs (5%) GF Blackstrap Molasses (Flame-out)

Mash
Single Infusion mash for 60 minutes at 152 degrees

Boil & Hops
60 min boil

0.6 oz Chinook pellets (60 min.)
0.25 oz Willamette pellets (Flame-out)

It is already malted...I don't know its extract potential, so in the above recipe I am assuming it is similar to 2-row. Is this a fair assumption?

I don't know what its potential is but I think you have to assume it is less than that of 2-row by at least a little bit.

You probably won't even get that extract potential with millet. I'd say 1.025, maybe even a little lower. Millet is going to give you a malt character, but I wouldn't rely on it for my primary fermentable source just because of the very little amount of sugars.

When do I add the sorghum LME? I have seen some people add it at 10-15 min left in the boil, I have seen some add it at flame-out, and I have seen some add it for the full boil.

I've had the best luck adding it later. I'd add it at 10 or 15 minutes, just to be sure you have enough time to get it fully mixed in and the wort back to a boil (though I'm sure some people have had great luck adding it at flame-out, I personally want to make sure I've brought it to a boil).

I'd combine the two. Keep the millet at 5 lbs, the oats somewhere between .31 and .62 lbs, and the molasses at .17 lbs, and add the 1.56 lbs of sorghum late in the boil as suggested.
