Default Gluten free all grain 1 - homebrewer 0

made an attempt at all grain gluten free brewing.
1# Quninoa
1# kasha
2# GF roled oats
1# minute rice
1# rice hulls
Mashed with 10 qts h2o at 155 for 45 minutes
FG of this mess 1.010
the wort looked awesome just not sugar conversion. What might I have done so wrong?

To salvage this mess I added 1# simple candied sugar
1.5 # corn sugar
1# Cane Syrup
.5 # maple syrup
FG 1.050 and bubbling away in the fermenter. What say You?

I think you might of needed to add some AMYLASE ENZYME to help with conversion

Yeah, you need to malt some of your grains. I'll usually malt my grains AND use amylase for good measure.

someone else told me that as well after the fact. I guess i should have chewed it up and spit it out like the Dogfish Head did in there blue corn beer, Ha ha.
