Default Anyone making advances on a gluten free?

I have read some of the recipies. And midwest has the extract now. But i have heard head retention has been a problem with the homebrews. SWMBO liked Redbridge. Possibly because it made her feel, (normal?) again.

I would love to make her a 2.5 gallon extract batch of something tasty.

I am fixing to malt some quinoa, my grocery hasit in bulk, but that is all I got. I do have to figure out how I am going to grind it before I bother.

Just make sure your yeast is also gluten free as well.
I have found a great gluten free yeast that I sell a boat load of in the store. It is designed for high gravity 18% but I have several beer brewers using it for their gluten free brews and they love it, ferments clean and drops out fast.

Check out my recipe and others modifications on it (hop schedule mainly). There's also a link to the GF Group on here. Some people have made some recipes, but usually don't report back with much detail.
