I just picked up an old smack pack of wyeast 1275 on the cheap at my LHBS. I am just looking for experiences or reccomendations about this yeast strain.
I am considering using this strain in an irish red or a Pale Ale Malt, liberty smash.
This yeast rocks. The only time I used it, I got a clean, bready nose with more of the same on the palate. It's very subtle and it has a dry, mineral, honey character in the background. For an English yeast, it's not fruity.
