To bring this thread some closure, I ended up entering both beers in the New England Regional Homebrew Competition held last weekend. The WLP860 beer scored a 33, generally indicating a good beer with some minor flaws. The judges thought the beer was balanced to be a little too bitter, and suggested improving the sweetness of the beer. The WLP820 beer scored a 19, generally indicating a beer with off-flavors and aromas, major problems, and "unpleasant" to drink. The WLP860 did not place (but I did have the good luck of winning the Pilsner and Dark Lager catgories in that competition). So my takeaway from this experiment is that WLP820 should be handled different than most lager yeasts, and I have yet to have a beer with this yeast that makes me think it's worth the hassle. Just use WLP830 or 833 and call it a day.

Hope this is helpful to someone out there, and I'd like to apologize to the good judges in Brew Free or Die that I tortured with that second beer. Cheers.

What did the 820 beer finish out at, and how long did it take? That sucks it didn't work out so well. Did you finish it off?

The 820 beer finished at 1.015; I dumped it. It was extremely phenolic.

I used it for an Oktoberfest and was ok...even though was an extract kit... It was a slow fermenter for sure but I found that serial temp increases from 50*f to 55*f over 3 weeks seemed to work out good. Seems a higher end of lager temps for fermentations
