Does anyone know what yeast Stillwater uses? The description of Stateside says fermented "using a classic farmhouse yeast." That makes me think Dupont, but anyone have any solid info?
I would recommend calling the brewer. I was at Epic here in SLC and they told me what yeast they use for one of their beers.
I also wonder if the session on the brewing network has ever done a show on stillwater. They get those things out of them sometimes.
I emailed the brewer a while back. Any further insight? Are the peppery flavors from the yeast or added spices? I know they add sage to one...
