It's only the surface that counts, and the main action at the surface is CO2 outgassing from the liquid. Conceptually there's actually pressure at the surface keeping outside gas from interacting with the liquid.

In fact, there's so little concern over flow and mixing that many breweries use open fermenters; as in, no top at all. Think above-ground pool instead of a giant conical.

Thats the kind of pool I want to swim in! (except maybe for the lack of oxygen)
