I have a Belgian Dubbel I made about 10 days ago. Checked last night and it's at my expected FG.
How long past ferm should I plan to let it sit on the yeast? My plan was 4 weeks total. Good, bad?
That sounds pretty solid to me, probably about the length of time I'd do myself. Let the yeast clean up after itself.

I stopped doing interim SG readings about a year ago. 4 weeks primary, 4 weeks bottle conditioning and 5-7 days in the fridge. No bottle bombs, and no batches that failed to reach the expected FG range.
