I am currently cellaring 5 gallons for what will be a total of 8 months. When I put it in the secondary, I added bourbon and oak chunks. Do I need to add more yeast at bottling or will the yeast still be ok? It's about 7 percent
It can be ok anyway but it will take very long to carb when bottled. I will use some t-58 for bottling but it´s possible taht will be ok without it.
