Yeah I know it wasn't an optimal situation...I essentially ran out of time at the end of the brewing. I cooled the boil pot in an ice bath for about 10 minutes and then dumped the whole lot of it into a sanitized bucket with lid. So there's several things going on here. Will there by hot side aeration? The wort was still pretty hot when it went into the plastic fermenter. Will there be chemical residues from the food grade bucket that leeched into the beer?
I tasted the wort before pitching and it tasted great...so hopefully things will stay that way....
