Default pitch before moving to fermenter?

Hello.
I did my first all grain batch last night. 1 gallon ipa of my own (very simple recipe).
I'm planning to make 1-2 gallon batches at home in my little kitchen somewhat regularly. The problem is that I only have one 1 gallon jug and two .5 gallon jugs (growlers).
If I ever wanted to ferment a full 2 gallons in all three jugs, would it be OK to pitch the yeast in my kettle (after bringing down to temp) right before pouring into the jugs? I thought this might be a smart way to ensure that the yeast is pretty evenly dispersed.

No reason it wouldn't work. It would be a lot easier than portioning out the yeast for each jug.

the issue would be figuring out a good, sanitary method of making sure there was an even mix

Also, if you intend to filter out any trub you'd likely lose some yeast as well.

If you just stir it with a sanitized spoon after pitching, it would be fine.

Ah, yes. I forgot about straining. I might just skip the straining step this time as a tradeoff for even yeast distribution.
