Had a great starter going for a brew day last weekend, then the kids got sick and I couldn't brew. Tossed the flask in the fridge and shut the door.

Now I want to brew on Sunday, should I decant and toss in some new starter wort and get it back on the stirplate? Or can I just let it come to room temp and pitch? It's a fairly low gravity beer at around 1.057.

I'd say one week in the fridge should be fine, particularly for that gravity. Take it out a few hours before pitching so it can come to pitching temperature. Decant and pitch.

Now if it's several weeks, or a high gravity beer, I'd make a new starter from it. Either by splitting in half and raise one or add some wort to the whole to re-activate it, after decanting of course.
