Is this over attenuation?
I was not sure if this should go in Yeast / Ferment or AG forum so I apologize in advance if it needs to be moved.
First AG Irish Red 1/20/13
OG was 1.054 (spot on according to BeerSmith)
FG was supposed to be 1.010 to 1.012
Hydro reading after 3 wks in primary 1.007-ish
Double checked and then triple checked with refractometer (and some calculations) and got 1.008-ish
So as a semi-noob, how does this affect what appears to be a great looking and tasting beer?
PRIMARY: Apple Cider (13 gallons)
Conditioning: Mish-Mash/End of Summer Ale
Drinking: Hill Farmstead - my local brewery
