I'm interested in making Brandon O's Graff, which calls for Nottingham yeast or Safale-05. I have no idea what either of these are. I did some Googling and found that Danstar is the maker of the Nottingham, but my local shops don't carry that brand. Can anyone suggest an equivalent White Labs or Wyeast strain?

There have been lots of reported problems with people using Notty lately. I've switched to us-05 and have been getting very good results.

Yah, lot of quality problems on the Nottingham lately, search the threads here OYE! Id use the S-05

As long as the temp stays around 70F or lower, Notty and US-05 should give you about the same results. I notice little, if any, difference with the same recipes.
