So in a situation like this would you scoop some of the krausen off? What would ones best plan of attack be for this?

I sanitized my chef knife and scraped it off, twice.

Over night I dropped the temp down, it is at 61 F now and only has about an inch of krausen. Put the lid on and it is bubbling nicely.
