Default Lost power, very cold fermentation

In Western MA. Sams summer clone, great ferment for 7 days at 72. then we lost power due to the storm. Its now down to 56 in the fermenter. I wont be able to bottle until maybe Saturday. Im thinking go straight to bottle rather than warm it back up. We wont have power for at least 3 days.

Take a reading and see where it's at. It could be done. If its way off from being finished, you will most likely need to pitch a second yeast.

Why a second yeast?

If the SG is higher than expected, pitching more yeast into a too-cold fermenter will just result in a lot more stunned yeast sitting in the bottom wondering wtf hit them.

Take the SG reading, adjust for temperature (off the top of my head, subtract a point) and if it's too high get that puppy warmed up so the existing yeast can get back to work...

Cheers!

Im bottling today. Never seen this on top of the fermenter before. The bottom of the bucket had yeast in clumps rather than the smooth beach look.
