looking for a certain yeast.

Hello all. I hope Im in the right forum. For my next beer, I'm looking for a certain yeast. I read on here, and I don't remember where, and can't find it now, but this yeast when pitched and fermented at a certain temp, gets a banana smell and taste. Can anyone help me with this, and tell me what temp achieves this flavor? Thanks.

White Labs - WLP300 is a hefeweizen strain, so it'll give you some clove flavors also. But at 68 degrees, you'll get plenty of bananas!

Banana in a chocolate porter! It just sounded right to try. I may be the only one that likes it in the end. But that's ok, more for me! Lol.

Funny, that very idea occurred to me a couple of days ago when I was tasting my Founder's Breakfast Stout clone attempt. The chocolate flavor was very pronounced because of the dry-nibbing, and there was no coffee yet because I was planning to add it at bottling. I thought that some banana esters would fit well with the flavors. Alas, I dislike the clove phenolics that the hefeweizen strains give off, so I don't think it would work for me.
You should definitely make your chocolate porter with a hefeweizen strain at 68F!

I believe I'm going to try it. If I could find a way to neutralize the clove flavor, or at least hide it as much as possible, that would be a plus, but I think ill be happy with it either way. I'm doing it!!

If I remember correctly the banana esters will not stand out very much unless some wheat is used.
