I pitched about 2 cups of White Labs 001 California Ale Yeast slurry into my IPA two days ago. The heat has been off and the temperature is hovering around 64-66 °F. It seems to be happily fermenting.
I've read that over pitching by this amount doesn't hurt anything and the cooler fermenting temp will produce a cleaner flavor.
Does anyone have any experience with this yeast at these temps for a northwest style IPA? Can you say what effect it will have?
Should I make an effort to get it up to 70°F given that it seems to be proceeding just fine?
