I'm considering making a 'Viking Ale', which consists of Pilsner and caramel malts and spiced with sweet gale and heather tips. The recipe (which comes from BYO mag) calls for Wyeast 2000 Budvar, which is a lager yeast, and for it to be fermented at 68 degrees. Will that work and if so, would it create any off flavors?

What's the range on that yeast for temp? If you're worried you could just go with a Cali common yeast

Optimum is between 45-54 degrees. Yes, I would consider a California common yeast as well as a European ale yeast. I've just never heard of a lager yeast being used at ale temps
