Help with 3726 please
Brewed a Saison with 3726. I had it in a storage container with water and an aquarium heater that kept it @ 82 for the first 4 days, then up to 88 for 10 days. It started @ 1.053, but is only down to 1.014 (corrected). It was an extract recipe with 85% extract, 15% cane sugar. It was a 1.6 liter starter into a 3.5 gallon batch.
I want it to go lower, but am afraid to push the yeast much hotter.
Will taking it hotter lower the gravity?
What temperature should not be exceeded?
Does it just need more time?
3726 is safe to bring to 90f
Should bring the gravity around 1.005 or lower.
Give it some time. Saison yeast sometimes ferment in stages. I leave mine in primary for about 3 weeks, then rack to secondary. I've seen third and fourth waves of fermentation take place up to 4 weeks after brewing. Keep it warm, 85-90º. Don't let it sit on primary much longer than 3 weeks at that temperature though. In general autolysis isn't a problem on the homebrew scale, but at those temps it can be more of a problem.
