I'd like to make a Wit for the late summer months and I was thinking of culturing some yeast from the GLBC Holy Moses to ferment with. I can't seem to find out if the dregs are just for bottling, or if it is the yeast they ferment with.

Any ideas?

It seems like a regular witbier yeast strain, WLP400 or Wyeast 3944.

I hate that beer BTW, way too much bittering hops and spices.

For a wit, I would guess that they use only one strain of yeast. Using a separate yeast strain is more common from the "monk" breweries, or for some other styles, which they yeast can't handle the higher alcohol.
