I am going to do a small batch brew tomorrow. Using Mr. Malty, I it suggests just 4 grams of yeast. I have an 11 gram pouch. I am a new brewer, will the remaining unused yeast be OK if I put it into a small ziploc in the fridge, or is is likely to cause a sanitation problem if I try to save half a packet? Is 11 grams overpitched if I use it on a 1.2 gallon brew? I'd assume so.... but I don't pretend to know much. THANKS! Dan

Overpitching is way better than underpitching. I'd use the whole sachet since dry yeast is relatively cheap, and you do run sanitation risks by trying to save it.
