Default Expired yeast?

So I'm planning on doing a lime and basil hefeweizen with white labs hefeweizen IV yeast. It's been nice and cold in my fridge the whole time, but the expiration date says sept. 16th 2012. Is it safe to use? Make a starter and pitch it? Or don't bother and buy fresh?

it's safe, the expiration date is about the expected life of the yeast inside... you will def have to make a starter

If you have time, make a starter. If it doesn't take off or if you're pressed for time, get a new vial.

You should be OK but to make sure you don't underpitch I agree with BBL_Brewer on the starter. After a while the yeast will start to die off in those smack packs and total viability of the pack is gonna go down. A well made starter will go miles in getting that pitching rate up to par.

As far as how much starter to make, once again there's Jamil to the rescue. The yeast calculator on mr malty will estimate viability based on production date, so you can ball park what kind of starter your looking at.

Great. Thank you everyone for the replies. I just wasn't sure and didn't want a ruined batch. Ill definitely make a starter.
