Default ECY08 Brasserie Blend

Fermenting a 1.060 rye saison at 83F is ridiculous! Dropped 50 points in 48hrs. Smells like tropical fruit and tastes of wonderful clove and is continuing to dry out. Gonna dry hop it once it's done and into the secondary. West coast ryePA, meet Belgian saison.

And it's still bubbling.

This one is a winner.

Keg is all carbed up and pouring. A bit more hazy than I'd prefer. But it's still early.

Smell: fruity- ripe tropical fruit, hint of cloves

Taste: spicy! Rich body. Smooth mouthfeel

Finish: clean and moderately dry.

Definitely keeping this yeast around for a few generations!
