Do it but you might only want to go with wlp099. My 1.120 RIS got mashed at 160 and makes it into the mid 20s for terminal gravity. Plus it has a crap ton of back malt. It usually goes from 1.045ish to 1.026ish in six months. I think my batch from October is sitting at 1.024 last I checked which is same as I got a few months ago. I am using the WY lambicus strain, but it doesn't come off very bretty to me. I get a slight cherry and the funk is hidden by the roastiness and bitterness. Give it a go, but it might end up under 1.020 for you.
