Default 2.5 hour lag ;)

I pitched a big old ferocious starter on my stout and that thing is bubbling strong after 2.5 hours. I had 2 batches in a row spoil using dry yeast with no starter...none of that anymore...

This morning the top had blown and there was brown gunk all over the place. Maybe that starter was too big
