i am interested in a grain mill, however to pay 125 when there is a site which has grain mills for 89 according to homebrewfinds, as well as I am uneducated in grain mills but what is the hopper used for?

The hopper is the "funnel" at the top that you pour the grain into.

This appears to be a model AA which is adjustable at both ends. Other mills that you are seeing for less money are likely non-adjustable or less adjustable.

Correct. This one is adjustable on both rollers.
