Default yeast question??

does anyone know the highest temp that yeast can be pitched at? I think I misread my thermometer and pitched my wyeast Belgian white too high.

Anything over 85 would be a concern for me for an ale. I don't do lagers. What beer was it?

Yeah it depends on the strain but you'd typically want it below 80 for most ale yeasts. Was yeast did you pitch?

What temp do you think you pitched it at???

Actually with Belgian yeasties it's okay to pitch them somewhat high...it brings out all the funky Belgian frutiness that way.

Keep notes on this one. If it turns out great, make sure to pitch at higher temps for that again!

Yeast can take temperatures up to 120°. Some will survive at 120° but most are critically injured. Above 140° and yeast is toast.
