Default Winter Warmer Ale at the end of the summer!

I brewed a Winter Warmer ale on December 6 and was hoping to enjoy it late last February. It was still pretty harsh. I had another one a month later and it was coming around. Another one in May and a bit better. I cracked one a few minutes ago and although it foamed a lot it is great.

Now for another month or so and cool weather sitting by a fire...

Based on Mason's Winter Ale. A recipe I found on the interweb somewhere.

11 lbs US 2 row
1.5 lbs C-120
1 lb C-80
.25lbs Carapils
.125 lbs Roasted Barley I used the closest Crystals and Barley that the LHBS had.

I used Burtons Ale Yeast

1 oz Galena 60 min
.5 oz Cascade 60 min
.5 oz Willamette 60 min
.5 oz Cascade 30 min
.5 oz Willamette 0 min
.5 oz Cascade 0 min
.5 oz Willamette Dry Hop
.5 oz Cascade Dry Hop

Mash at 152° for 60 min I had 154°
Boil 75 min

OG = 1.073

I had this happen with an IPA I made. tasted it right out of the carboy as I was bottling and it tasted like gasoline. a couple of months later and it's sublime.
