So, I brewed this IPA. The basic idea was to take British IPA flavors, and do it American style, beefing everything up. Four ounces of Northern Brewer, four of Goldings. DME, Crystal malt, Carapils, and toasted barley. I only did a three gallon boil, and I'm quite sure I didn't get full utilization of my hops.
But here's the thing: There is a certain flavor to this beer that to me, would almost be "spoiled", except it's very slight. What this flavor is, is the flavor of various Belgian beers, Hefes and so forth. Everyone I've given it to agrees with this analysis, and most people really seem to like it. What I'm wondering is what might have caused this flavor, is it some wild yeast that got into my beer, and by serendipity is something good?
It's not a bacterial infection, I'm pretty sure of that.
Full recipie and procedure would help.
What were your fermenting temps, did you cover the boil etc.?
