Well, start an organisation to campaign for trade regulations forbidding anything to be labelled "lambic" or "lambik" unless it is wild-fermented in the Senne valley, and served unpasteurised. Take that Sam Adams, and Chapeau, and every other crappy nobody misusing the name.
