If you wait the full two weeks you in essence have 8 weeks to Primary, secondary, and keg. I think everything on your list would be ready by then, but the more complex Beligians will be a little green. Most people I have talked to say ~ 6 weeks fermentation so that puts you in the range but close. If you brewed this weekend, I think you would be fine on any of the styles.
If you want to have a 100% polished ready to go beer take your time and do the Wit, Pale Ale, or Double IPA IMO, but honestly I think you could pull any of them off if you brew this weekend.
