Default What to brew this weekend for October

Which of these styles do you think would be ready if brewed in the next 2 weeks for a competition in October?

Dubbel
Belgian Pale Ale
Belgian Golden Strong Ale
Non-traditional Saison (fruit or spice added)
Session Belgian Pale Ale
Belgian Dark Strong
Belgian Double IPA
Belgian Wit

If you wait the full two weeks you in essence have 8 weeks to Primary, secondary, and keg. I think everything on your list would be ready by then, but the more complex Beligians will be a little green. Most people I have talked to say ~ 6 weeks fermentation so that puts you in the range but close. If you brewed this weekend, I think you would be fine on any of the styles.

If you want to have a 100% polished ready to go beer take your time and do the Wit, Pale Ale, or Double IPA IMO, but honestly I think you could pull any of them off if you brew this weekend.

I was thinking that the strongs and probably the dubbel were out if I wanted a polished product.
