Default Souring a English Bitter

Got my hands on some nice souring yeast. and have done some souring with fruit and strong golden's, but was wondering if if one as ever done in with a traditional bitter, not sure if it would be good or working very well, but sounds interesting... thought?

It is my understanding that Guinness Extra - You sour 1 pint to five gallons. After the pint is soured, you pasteurize it to stop the bug, and then add it back to the five gallon batch.
